Dear Jason,

The location states "docked"; however, are we allowed to listen to the class while mining?

Definitely, with any luck you'll also be able to participate in a practical demonstration of the "Wartime in EVE University" portion of the lecture too.

Little late to answer now that the class is over, but as Ernesto Guevarti says, it's not the best idea. It can be hard to concentrate on two things at once. As mentioned in the class, you really should be refreshing your D-Scan every 5-10 seconds anytime you're undocked. I like to say it's best if our classes do not result in an after-action-report.
