I used to do some trading / hauling and use EVE-Central, but that doesn't exist anymore. (I've been out of the game for a while.)

I see EVEMarketer and EVE Market Data are linked to that page. Are they good sites to use?

And what about trading in Triglavian space? I see Pochven isn't in EVEMarketer. Is there anything that tracks trade there? Or is that not really a place to trade?

Any other suggestions on trading are also welcome.

I've been using EVEmarketer for most of my trading-related needs and found it very reliable and comprehensive. Over the last 4-5 weeks it has been having issues with temporary event loots, but I believe this is mostly due to changes on how the ESI manages it. Otherwise, very trustworthy. There are a few other tools that are still well maintained, but I'm not all that familiar with them.

Regarding trading in Pochven, there are several NPC stations and some Upwell Structures with some buy/sell order, but this isn't much of a thing. The easy access to known space through predictable reverse static wormholes makes it easy for player to just jump out and go to a nearby trade hub. It's especially true for the lower part of the triangle that have reliable connections to Jita and Dodixie.

it is useful for items with slow turnaround, where people can try to put some insane offers that may or may not represent reality - exactly in the spirit of the motto "remember kids, the offers you see on the market are those that did not get sold"
